Is it valid to sign/notarize a Last Will & Testament in another state
(nevada) other than the one you reside in (oklahoma)?
In general, where would someone look in the state law to determine the
answer to this?

Yes.
In general, where would someone look in the state law to determine the
answer to this?
The laws of Oklahoma relating to wills and notarial acts. You'll find
that there is nothing that requires a will to be signed in OK for it
to be valid in OK, as long as it is signed with the formalities
required by OK.
