Your're safe if you take off the license plates and sell the car with a
bill of sale.
Without plates, the car cannot be driven on the road. The buyer is forced
to get the car licensed at the DMV and you are in the clear. (Buyer can get
"temporary" paper license at the nearest DMV).
If you still are afraid of your own shadow, then the sale can be consumated
through a used car dealer who will do the two transfers for a reasonable
fee. (From you to the dealer and from the dealer to the buyer).
On the bill of sale, write "as is" on it so there's no dispute later that
you sold a bucket of bolts instead of a fine motorcar.
